Washed Processing: The Pursuit of Coffee Clarity
Of the three core processing methods, washed is the oldest and most demanding. It is also the one that reveals the most about a coffee’s true character.
By removing every trace of fruit mucilage before drying, washed processing delivers the purest expression of origin and variety — unclouded by fermentation flavors, unaltered by fruit sugars.
The Washed Process Step by Step
1. Selective harvest — Only perfectly ripe cherries are hand-picked. Any underripe or overripe fruit is discarded before processing begins.
2. Depulping — A mechanical depulper removes the outer skin and most of the fruit flesh, leaving the bean protected by its mucilage layer.
3. Fermentation — The beans, still coated in mucilage, are placed in fermentation tanks for 12 to 36 hours. Natural microorganisms break down the remaining sticky fruit material. Temperature and pH are monitored closely.
4. Washing — Once fermentation is complete, the beans are washed in clean water channels. The friction of moving water removes all remaining mucilage, leaving only the clean parchment-covered bean.
5. Drying — Beans are spread on raised beds in thin layers (2–3 cm) and turned regularly. Drying takes 10 to 20 days, depending on weather, until moisture reaches 10–11%.

Washed coffees are the benchmark for evaluating terroir. Without the influence of fruit fermentation, the taster experiences:
- Bright acidity — citric, malic, sometimes wine-like
